What do you do with your leftovers? Depending on what I have, it’s make into a whole pie or a turnover or what is locally known as a Puff.
Faced with the daunting prospect of going to to shops or rather queuing to get into the supermarkets or if you are in the queue to pay, one tries to get creative and make do with whatever is on hand. No waste during the COVID-19 phase.
Right, I had stir fried spinach & chicken with mixed vegetables sitting in their respective Ziplock containers, asking to be made into something fancy.
Puff pastry or what is a cheaper alternative here – frozen roti prata skins from the local supermarkets.
Ingredients: leftovers
1 cup more or less of stir-fried spinach
1 cup more or less of chicken with mixed vegetables
1 sheet of store bought puff pastry or 6 frozen roti prata skins
Method:
A) Store bought puff pastry
- Lightly roll the pastry out.
- Cut into 12 squares (3 columns x 4 rows)
- Place 2 teaspoonful or more of each filling into the centre of each square.
- Fold 1 end across at a diagonal into a triangle shape.
- Use a fork to press down the edge, this helps to seal the pastry & gives it a nice finish.
B) Frozen roti prata skins
- Cut each circle into half.
- Place 2 teaspoonful or more of each filling into the centre of each semi-circle.
- Fold in half into a shell shape shape.
- Use a fork to press down the edge, this helps to seal the pastry & gives it a nice finish.
- Preheat oven to 200ºC (400ºF).
- Use the fork to prick the top of each turnover.
- Bake for 18-20 minutes.
