A little bit of a stroll down memory lane with this dish. Many years spent in the Caribbean has opened up yet another food chapter.
Missing the sun, the sea and the easy going life in Sunny Caribbee. Not forgetting some of the different cuisines that have evolved from a collection of English, East Indian, Chinese and so many more. Many dishes that have now become distinctively Caribbean with similar or different names.
Rice & Beans
1-1/2 cups long grain white rice
1/4 to 1/2 cups canned black beans (drained)
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground nutmeg
- Wash rice grains in water. Drain off the water. Wash rice grains again till the water is almost clear.
- Cook rice as per grower’s / packaging instructions together with the rest of the ingredients.
- Serve hot as a side.
