When you are always thinking up of new ways to present or add to old recipes. Or when you want to have a snack that’s quick & easy to make. When Shortbread Slices are not what you have in mind, this Shortbread Crumble Slices is quite versatile in the varieties of fillings that you can substitute, likewise what you add to the topping.
Shortbread Almond Crumble Slices
Ingredients:
Shortbread base:
100g unsalted butter
150g plain (all-purpose) flour
50g white sugar
Filling:
1/2 cup Jam of any flavours or sliced/chopped fruits
Crumble Topping:
100g unsalted butter
150g plain (all purpose) flour
50g white or brown sugar
50g ground almond
50g desiccated coconut (optional)
Handful of flaked almonds (optional)
Method:
- Make the Shortbread base first. Mix the flour & sugar together in a mixing bowl.
- Cut the butter into cubes (COLD, do not soften) and mix together with the flour/sugar mixture.
- Press the shortbread mixture into a 9×13″ tray when the dough just comes together.
- Top the jam onto the shortbread. Place in the fridge while you prepare the topping.
- Preheat oven to 175ºC (350ºF)
- Make the Crumble topping. Mix the flour, sugar, ground almonds & desiccated coconut together.
- Cut the butter into cubes (again, COLD not soft) and mix together with the flour/sugar/almond/coconut mixture.
- Sprinkle the Crumble topping over the jam and top with flaked almonds.
- Bake for 15-20 minutes.
- Remove & cut into slices.
