Got to make, got to make it before the rhubarb goes off. Did you know that rhubarb originated from China? And that it was likely that Marco Polo brought it with him back to Europe? True? Who knows, just Wikipedia it!
I found a recipe for Rhubarb Sauce to see what goes in it. This will be my maiden attempt and I decided to add Apple in it sort of like how the taste of rhubarb is like cranberries (tart) and I had made a cranberry sauce from an online recipe using just cranberries and a can of frozen apple concentrate.
Because the rhubarb I had was more than the original recipe, I increased the portions of water and sugar approximate to their ratio accordingly. I did not use the lemon peel or spice as I wanted to have the original taste (for me to taste!).
Ingredients: made about 300ml sauce
3 cups sliced rhubarb
1 Fuji apple, skin removed, grated
1/2 cup water
3/4 cup soft brown sugar
Method:
Boil all together in a saucepan, stirring every now and again till the rhubarb/apple becomes very soft and collapses into a sauce.
Bottle in a clean glass bottle while hot if not using immediately.
