This is my take of the Thai salad – Yam Tua Poo, no spice but very nice.
Why Lotus Root and Wing Bean ? Both contain loads of essential vitamins and are gaining more popularity as more persons become aware of these foods. Too much might not be good for you, so do be aware of some possible side effects from the consumption of these foods as they contain potassium and iron.
Ingredients : serves 3-4
1 segment of Lotus Root, thinly sliced (about 1 cup)
1 cup of chunked Wing Bean
1 teaspoon each of Black & White sesame seeds
1 tablespoon rice wine vinegar (other varieties can be used as a substitute)
2 teaspoon soy sauce
1 teaspoon sugar
Method:
- Cook the Lotus Root & Wing Bean in boiling water till it is just cooked, about 2 mintues. Blanch in cold water, this helps to keep the green Wing Bean from turning yellow and also keeps the vegetables crunchy.
- Drain and place in mixing bowl.
- Toss all other ingredients together with the vegetables.
- Chill and serve.
