When you have an empty nest and too much time on your hands. Another K-drama influenced dish which turned out very well.
Beef Bulgogi 불고기
Ingredients:
300g stir-fry beef or sirloin cut into strips/sliced
1/2 onion
2 stalks spring onion
1/2 carrot
1 teaspoon sesame seed
Marinade:
1/2 red apple
1/2 onion, skin removed
3 cloves garlic, skin removed
1/2″ ginger or 1/2 teaspoon ground ginger
2 tablespoon rice wine or mirin or dry white wine
3 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
1 tablespoon apple cider vinegar
1/4 teaspoon chilli powder
Method:
- Peel & core the red apple. Cut into big chunks
- Place all ingredients for Marinade in a food processor & process till smooth.
- Add the beef slices to a mixing bowl. Add the marinade. Mix till the beef is well coated. Allow at least 30minutes to marinade. Best if left overnight in the fridge.
- Slice the onion.
- Cut the spring onion into 2″/5cm lengths.
- Peel the carrot & cut into matchstick sizes of about 2″/5cm lengths.
- Heat some oil in a saucepan or wok.
- Add the onions & carrots. Fry till onions turn translucent.
- Add the marinated beef & fry.
- When the beef is almost cooked, add the spring onions & any of the marinade to the beef. Fry till beef is fully cooked.
- Sprinkle the sesame seed on top of the beef before serving.
- Serve with rice
