A simple and healthy meal made up of leftover roast chicken, avocado and home-made ciabatta.

Ingredients:

1-6″ ciabatta loaf

1/2 cup roast chicken, shredded

1 avocado

2 tablespoon olive oil

1 tablespoon lemon juice

pinch of salt

dash of pepper

Method:

  • Mash the avocado.
  • Mash the oil, juice, salt & pepper into the avocado.
  • Mix in the shredded chicken.
  • Half the ciabatta and spread the chicken avocado butter.
